
我試過不下十幾種香蕉蛋糕的配方,
跟實驗精神沒關係,
純粹因為每次都把順手抄來的食譜亂丟,
不過下面這個誤打誤撞的食譜很讚,
加了椰奶的香蕉蛋糕多了些南洋味,
重點是步驟簡單又無油﹝但是椰奶熱量應該也不低啦﹞,
蛋糕一吃完,隔日我馬上安可再烤一個,只花我十分鐘,
把食譜記在這,不然下次我肯定在茫茫網海中遍尋不著。
Ingredients (serves 8)
- 1 cup desiccated coconut (Tess: 略)
- 1 cup caster sugar (Tess: 減半)
- 1 1/2 cups self-raising flour, sifted
- 1 cup mashed banana
- 1 cup coconut milk
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
Method
- Preheat oven to 170°C. Grease and line a 6cm deep, 10.5cm x 20.5cm (base) loaf pan.
- Combine coconut, sugar and flour in a large bowl. Using a fork, beat banana, coconut milk, egg and vanilla in a jug. Pour over flour mixture. Gently stir to combine. Spoon mixture into pan. Bake for 1 hour to 1 hour 10 minutes or until a skewer inserted into centre comes out clean. (Tess: 40~45 mins)
- Stand for 10 minutes in pan. Turn onto a wire rack to cool completely. Serve sliced or toasted with butter, jam or cream cheese.
